Tasting Note
Light to pale straw in colour. The nose is fresh and complex offering aromas of white peach, ripe apricot, citrus and delicate floral notes. The palate is rich and textured with ripe apricots and a hint of tannin whilst the acidity is high enough to provide linear focus and freshness. A fine and elegant finish.
Producer Note
Olifantsberg strive to make wines that reflect their unique location by focussing on hands-on viticulture that yields grapes that demands as little as possible intervention in the cellar. The estate vineyards are mostly dedicated to varieties that they believe can truly thrive under the very harsh conditions they experience. Their unique schist soils, constant winds and elevation combines to produce concentrated fruit that produces elegant, fresh and age-worthy wines.
Vineyard
The Roussanne and Grenache Blanc are young plantings on the estate. The training is 'sur eschalas' in order to maximize vines per hectare and to protect the vines from very strong winds. The soil in the vineyards is vertical schist that lends structure and freshness to the wines.
Winemaking
Wild yeast fermented in seasoned 500L and 300L barrels. The wine was aged on the lees for 10 months prior to bottling.
Serving Suggestion
An ideal partner for smoked fish, crab cakes, chargrilled chicken or chargrilled peppers.
