Producer Note
Stavros Manolesakis with his father George Manolesakis started creating their own vineyards in 1989. The Greek varieties Malagouzia, Assyrtiko, Moschomavro, Limnio and Agiorgitiko come into the picture to accompany cosmopolitan varieties such as Sauvignon Blanc, Chardonnay, Cabernet Sauvignon, Merlot and Syrah and travelling through time with the aroma and flavour of wine becomes magical. The whole philosophy, culture, love and the experience of winemaking that they acquire prompted them to establish their own wine company MANOLESAKIS ESTATE in 1999. Watching their dreams become true, they never stop experimenting with new things and have equip the winery with the latest technological machinery in order to have the best result.
Vineyard
Cultivation in the traditional way with vineyards in linear forms. Every year new stems give grapes for better quality and quantity and they are easily operated.
Winemaking
Selection only of completely healthy and well ripened grapes. Red fermentation, at 22C in order to maintain the maximum aromatic character and reduce aggressive tannins. After the end of the alcoholic fermentation, maturation on the fine lees for 2 months.
Serving Suggestion
Exis Red is ideal with veal with mushrooms in red wine sauce, pasta dishes and Irish stew.
