An elegant, crisp and captivating Albariño full of ripe pear and apple, with hints of pineapple, quince and lemon peel through to a lively, fresh finish. 

Producer Note

Lagar de Cervera is the jewel in the crown of Rías Baixas. Located in Pontevedra, Lagar de Cervera produces elegant, pure and aromatic white wines. In 1998, this family winery became a subsidiary of the La Rioja Alta S.A. group and over time the estate was shaped into the largest estate-owned Albariño vineyard in Rías Baixas, covering 77 hectares. Considerable investment took place in the winery and in 2013 the new, state-of-the-art production facilities were opened, making it the most modern Bodega in DO Rías Baixas. These award-winning wines show the perfect balance of acidity, aromatic intensity and elegance and have a legion of followers across the world. 

Vineyard

The Albariño grapes are carefully selected from the estate plots in O Rosal and O Salnés in D.O. Rías Baixas. The terroir of O Rosal consists of schist soils, while the soils in O Salnés are predominantly granite. Each terroir lends different nuances to the wines, but the soils in both sub-regions are rich in organic matter. The distinctive mesoclimate imparts natural, fresh acidity to the wine and the proximity to the ocean also imparts characteristic mineral, saline notes to the wines

Winemaking

The entire harvest passed through an optical sorting machine, the first winery in Rías Baixas with this system, discarding grapes that did not meet the strict parameters. After cooling and maceration, the fruit was pressed in an inert atmosphere to prevent oxidation. After racking, the clean must was fermented at 15°C. A proportion of the tanks underwent malolactic conversion, resulting in a softer expression. The wine rested on its fine lees until bottling, which were kept in suspension by periodic stirrings imparting complexity to the wine.
