Chateau de Tholomies La Liviniere La Chapelle, Minervois

Vinification :

Cold pre-fermentation maceration. Fermentation in concrete vats. Aged in new barrels for 12 months. The other half of the blend is kept in inert vats to keep all the intensity of the fruit.

Soil :

Sandstone marl slopes.

Colour :

Dark with deep reflections

Nose :

True enchantment of complexity, offers a palette of aromas such as peppery vanilla and highlighting the particularity of sour cherry and prune accompanied by notes of black tapenade and chocolate.

Palate :

Ample, suave and concentrated, warm ripe tannins, with notes of roasted coffee and dried figs.

Recommendations :

Drink slightly cool in order to appreciate the fruit. Ideal with roasted meats including game or characterful hard cheeses. Roast pigeon will perfectly accompany this wine.

Cellar potential :

This wine has great ageing potential but can also be enjoyed now.
